We promised to purchase produce and meat from farmers we trust. We believe we must take responsibility for the humane treatment of the food animals whose meat we serve. Therefore we purchase meat products only from farmers who acknowledge their moral and ethical responsibilities to care for their animals. This includes how they are housed and what they are fed. Below are the farmers who raise the animals whose meat we serve:
AUSTRALIAN AGRICULTURAL COMPANY
We trust Australian Agricultural Company to provide us with healthy, humanely treated Darling Downs Wagyu beef.
HIDDEN HAVEN FARMS
We trust Hidden Valley Farms to provide us with fresh rabbit that has been loved and fed only the best feed, with no hormones or antibiotics. We’re looking forward to going down to visit them and do a little horseback riding soon.
HUDSON VALLEY FOODS
We trust Hudson Valley Foods to provide us with foie gras and duck. We have placed ourselves at the center of the controversy over the force feeding ducks to enlarge their livers to create foie gras. MAO FOODS, INC.
Mao Foods produces our Jidori chicken. Their birds are raised cage-free, fed all natural grain with no meat byproducts, and without any hormones or steroids. The resulting quality is very high and the chickens are happier too.
